Bored of your lunch and want some inspiration? I don’t know about you but in the summer I want something a bit lighter midday and so wraps are the perfect option. I had never managed to fold the neatest of wraps whenever I had fajitas for dinner and so I thought it was about time to learn how to do it properly! So I got on YouTube and found out how a wrap is put together and now I’m an expert ha ha! Below are three wrap ideas for you to try.
Recipe – Salmon wrap
1 tortilla wrap
Butter for spreading
Salmon, dill and lemon wrap filling
1 salmon fillet
a generous sprinkle of dill
squeeze of lemon juice (from a squeezy bottle)
a splash of olive oil
1.5cm of cucumber cut into half round slices
a little lettuce
a few drops of mayonnaise
- First off is to preheat your oven to 170oc
- Take some foil that is large enough to wrap up the salmon and place the salmon fillet on the flattened foil with the skin off.
- Cover the salmon in the dill, lemon juice and olive oil and wrap the salmon completely up. Cook in the oven on a baking tray for around 15-20 minutes depending on the size of the fillet.
- While this is cooking prepare the other fillings to go into the wrap.
- When the salmon is cooked, break it up into bite size chunks and set aside. If you are making this to take to work, why not cook it the night before and leave covered in the fridge until morning?
- Take a wrap (tip – it is best to work with wraps that are room temperature). Butter the wrap and arrange the filling ingredients in the centre.
- Now for the rolling! Take one of the long sides and roll it tightly around the filling so that it tucks it in almost. Pull tight away from the other side of the wrap and continue rolling tightly. Butter the end to glue in into place. Tuck the two ends into the wrap by pushing the tortilla inwards. If you need more help, check out the YouTube video I watched.
- Cut the wrap on a diagonal in the middle and serve!

Other wrap filling ideas
Avocado and salad wrap: 1 small avocado cut into chunky cubes (see my avocado on toast blog for tips on how to prepare an avocado), a little lettuce, and a few drops of mayonnaise.
Cheese salad wrap: Small handful of grated cheese, 3 cherry tomatoes, a little lettuce, 1.5cm of cucumber sliced into half rounds, a squidge of Caesar dressing.
