What I Eat In A Day 8

Here is another “What I Eat In A Day” blog post. This is an insight into what I eat, and my diet mainly consists of vegan and vegetarian options. This is a typical day for me; however, every day is different so some days I have treats and others I don’t. Some days I don’t get time for a cup of tea, but this was a day I did. I have made it realistic to what I eat on a day I am working from home. I hope you enjoy!

 

Breakfast

I had made some of my homemade granola and we had that with plant based milk and shared some strawberries. For a plant-based milk, I love almond milk the best. My favourite is the Rude Health range, as their drinks just have the best flavour and consitency!

Morning Snack

For a snack, I had a homemade lemon and coconut protein ball, with my cup of tea. The recipe for these is from Niomi Smart’s Eat Smart cookbook. I cannot recommend this book enough.

Lunch

For lunch, one of my favourite things to have is hummus, carrot sticks and wholemeal pitta bread. The hummus I use is the Me Too hummus and this is just the best hummus out there, in my opinion. It is creamy, not too overpowering and just so tasty!

Dinner

For dinner, I made a soya protein-based mince Spaghetti Bolognese. I put carrots, onion, celery, pepper, passata, herbs, garlic and avocado oil in it. I also season it with salt and pepper. I served it with some grated parmesan cheese on top. This is one of my favourite cosy meals and whenever we do this meal, we make double the amount and freeze half of it. We even freeze the cooked pasta to be super quick on another day. With the Spaghetti Bolognese, we also had some red wine. This Waitrose Red Wine is so lovely and really affordable.

Dessert

I had made a cake during the afternoon, so we had a small slice for dessert. It was a lemon and poppy seed cake and you can find the recipe on the BBC Good Food website.
