My food of the week

This is a random blog post but I just thought I would mention how much I love celery! It is therefore my food of the week. It is great in salads, as a snack with peanut butter, in wraps, risotto and stir-fry’s. Both raw and cooked, this little gem adds so much flavour but without lots of calories! What do you have celery in?

Try my celery, walnut and apple salad below…..

 

Recipe (serves 2 as a side dish)

1 large little gem lettuce chopped roughly

3 sticks of celery, peeled and chopped

handful of sultanas

handful of chopped walnuts

1 apple chopped up

squeeze of lemon juice

general drizzle of Caesar salad dressing

Equipment:

chopping board

large bowl to mix ingredients in

 

Method

  • Prepare the ingredients and toss everything together in a large bowl
  • Serve as a side to meals like pasta or pitta pizzas
