Healthy snacks always make me feel so much better. I love to make my own when I can and these Acai Bites are so easy to do. I thought I would share the recipe with you! The main flavour of acai powder is so yummy and it is packed full of antioxidants. The superfood acai fruit is found in the Amazon Rainforest and is incredibly pigmented for that stunning array of colour.
The blackberries I added contributed a nice sweetness. I invented this recipe hoping it would taste amazing from what was in my cupboards. Trust me, you will not be disappointed. You can even freeze the energy balls in small quantities to take out whenever you might need some. They stay so fresh and moist that way and you are certain to ensure you have enough healthy food to munch on.
Whizz up everything in a food processor until it is well combined. Remember to take the stones of the medjool dates prior to this.
To make each acai bite, roll about 1 tsp. of the mixture in the palm of your hands to form a ball. Then roll the acai ball in extra acai powder.
Store in the fridge or freezer in an airtight container.
