Indulgence over the festive season is perfectly acceptable in moderation and so I thought why not come up with a yummy plant based hot chocolate recipe! This is definitely a treat kind of recipe as the luscious coconut milk can be super luxe. However, with so many people drinking more plant based milks, why not create one of the cosiest drinks vegan style? I really hope you enjoy this recipe!
Recipe (serves 2)
- 400ml can coconut milk
- 100ml almond milk
- 4 tsp cacao powder
- 2 tsp cinnamon
- 3 tbsp date syrup
- Extract 4tbsp of the coconut cream from the top of the coconut milk can and mix it with 50ml of the almond milk in a small Pyrex jug. Put the rest of the coconut milk in a saucepan or large Pyrex jug and add 50ml almond milk to this too.
- To the large jug add the cacao powder and cinnamon and heat this in the microwave for about 2 ½ minutes at full powder, stirring halfway. Stir in the date syrup. Divide between 2 mugs.
- Heat up the small jug of coconut cream and almond milk for about 1 – 1 ½ minutes in the microwave at full power. Use an electric whisk or manual whisk to froth it up slightly. Add this froth to the top of each hot chocolate.
