This blog post is something a little bit different. I thought it would be interesting to show what my week of dinners is like. We tend to eat a range of meals that are mostly vegetarian or vegan, but we do have the odd bit of fish too. I love seeing what other people eat so I thought this would be a fun blog post to write. Often our weekdays involve easier meals because we are both busy and weekend meals can be a little more adventurous. Some meals are regular ones like salmon on Saturdays, but we don’t really repeat meals too often as we can always think of new ones to do or slight twists on pasta dishes we have enjoyed before. Meal planning is something I really enjoy, and we tend to stick to the meal plan with some flexibility or change it a little here and there. When I decided to do this blog post, it was a Wednesday so that’s why it is Wednesday to Tuesday!
My week in dinners…
Wednesday: Ricotta and spinach tortellini, garlic pitta bread, olive oil and lemon juice sauce, broccoli, and edamame beans
Thursday: Pizza, chips, tomatoes, frozen broccoli, ketchup
Friday: Stir-fry with Pulled Oumph, chickpea rice, tin sweetcorn, frozen peas, frozen broccoli
Saturday: Salmon, basmati rice, chickpea rice, satay sauce, stir-fry veg
Sunday: Vegan sausages, Yorkshire pudding, mashed potato, peas, carrots, frozen broccoli, vegan gravy
Monday: Cauliflower, pea and broccoli cheese sauce, vegan bacon, garlic ciabatta
Tuesday: Pasta, passata, salsa in the sauce, chickpeas, tinned tuna, garlic pitta
