Trout parcels

I love steamed fish. Its so healthy and really keeps its softness when cooked this way. Baking fish in foil with veg is a great way to get lots of flavour locked in the food. I love cooking salmon, trout, cod, and coley this way. These trout parcels are great for a bung it in the oven and leave it meal and then you can get on with other things.

Trout frame

Recipe (serves 2)

2 fillets of trout

2 sticks of celery

2 small carrots

1 large leek

Salt and pepper

2 splashes of olive oil

2 splashes of lemon juice (I love using my squeezy bottle)

2 squeezes of honey

2 splashes of soy sauce

8 new potatoes

Sprinkle of rosemary

Equipment:

Foil

Baking tray

 

Method

  • Peel the carrots and celery. Wash and chop into thin chunks/strips.
  • Take the outer leaves away from the leek, wash and cut the same.
  • Arrange the trout fillets in their own foil nest (enough foil to then wrap around them after). Season them with salt and pepper.
  • Add a squidge of honey, lemon, soy sauce and olive oil to each fillet.
  • Cover with the veg and wrap up each parcel.
  • Bake in a preheated oven for about 35-40 minutes at 160oC
  • While that is cooking, wash and half the new potatoes. Arrange on a baking tray and drizzle oil, salt, pepper and rosemary on them. Cook in the same oven for the last 20-25 minutes.
  • Unwrap each parcel and serve with some of the potatoes.

Yummy! I know it is a little unconventional using soy sauce in the fish and then having potatoes with rosemary flavouring against it but I like it and it tastes good!
